The brill is a luxurious and very tasty flatfish that is often compared to the turbot. The Scophthalmus rhombus, occurs from the Mediterranean to the North Sea. From a culinary point of view, the brill is special. The white to cream colored fillet is a culinary delight. A big advantage is that the thin skin is well edible. The fillet can be prepared on the skin, without it falling apart.
